We recently hosted a pot luck style recipe share and challenge at our Headquarters in Tempe, Arizona. Everyone had a blast trying new foods, sharing ideas, and crushing our macros!
It’s easy to get caught in a loop of the same macro choices day week in and week out, and it was great for all of us to see what favorite recipes help us each hit our numbers day to day. Sticking with this theme, we plan on featuring some blogs in the near future highlighting how clients have hit their numbers, sort of a day in the life of…so stay tuned for that!
We had some awesome entries for the recipe challenge, but the hands down winner of the contest was our client, Jennifer Theabold’s Chicken Fried Cauliflower Rice.
Jen’s a busy fit-mom, a business owner and active competitor, and is always coming up with fun and delicious ways to hit her numbers. This rice had great, authentic taste and is friendly enough macro wise to be enjoyed through all stages of dieting!

CHICKEN FRIED CAULIFLOWER RICE
- 1 egg
- 1 T water
- 2 T “I can’t believe it’s not butter” spray, divided
- 315 g white onion, chopped
- 300 g cauliflower, chopped fine
- 2 T soy sauce
- 1 t ground black pepper
- 14.6 oz boneless skinless chicken breast, cut small
- Red pepper flakes to taste
In a small bowl, beat egg with water. Melt 1 T butter in a large skillet over medium low heat. Add egg and leave flat for 1-2 minutes. Remove from skillet and cut into shreds.
Heat 1 butter in same skillet; add onion and saute until soft. Add cauliflower rice, soy sauce, pepper, and chicken. Stir fry together for about five minutes, then stir in egg and red pepper flakes. Serve hot.
Macros per serving (357 gram serving, or half):
11 F, 24C, 50 P with 6 grams fiber and 10 grams sugar
